Abstract

Protein, fat, and carbohydrate are the three major components of the diet. They are sometimes called macronutrients to distinguish them from the vitamins and minerals, which are needed in much smaller quantities. Of the three macronutrients, only protein has an unblemished reputation among the general public. After all, protein is the substance of muscle and most of us yearn for more shapely or more massive muscles. Protein supplements are advertized in every body-building and weightlifting magazine. Children and adults alike are incessantly told they need protein by the milk producers, the cattlemen, and other self-serving groups.
